Burgundian-style Pinot Noir.
Pleasing minerally nose of raspberries, brambles and delicate spice; on the palate enjoyably fresh with cranberries, more fine red fruit (similar to a Savigny), lovely sous-bois and a hint of herbal garrigue touching on it, with an elegant and mid-length finish.
The Pinot Noir is sourced from old-vine terroirs similar to Burgundy at over 400 metres altitude in Limoux, South of France. The wine is vinified using selected Burgundian yeasts with the ageing and bottling complete in Beaune. Sulphur levels are low ( 2022 : 30 mg / litre of free SO2 - almost natural wine level but the wine is ultra stable) ) and - when necessary - filtering is by gentle kiesellguhr method only.
