Peter Maude Fine Wines
2021, Domaine Arnaud Baillot, SAVIGNY-LES-BEAUNE Village
The vines are planted on two hills with two different exposures, north and south.
Organic agriculture. Manual harvesting with grape sorting and optimisation of choice of date through parcel-by-parcel ripeness monitoring. Traditional fermentation of 15 days in stainless steel tank. No punching (pigeage), pumping over twice a day until end of fermentation. 30% new oak.
Delicate and translucent ruby red. Pretty mix of aromas, violets and fresh raspberries pop out of the glass. A little racy with soft earthiness and white pepper lifted finish. Light weight and pleasant drinking. Jo Charvill 16/08/23.
Clear mid-ruby colour. Pretty nose of small red berries: red currants, strawberry conserve with a touch of mint. Soft caressing entry of raspberries and cranberries, then revealing an earthy sous-bois, with lots of raspberries and cranberries on the palate finishing with a little grip that will soften with time. Katharine Maude 16/08/23.
